At Slo Coffee, time isn’t something to race against; it’s something to sit with. Founded by Colin Lai and Paul Irwin, the Vancouver-based café has quietly carved out a space in the city’s fast-moving coffee scene by doing the opposite: slowing it down. With a focus on presence, thoughtful service, and drinks designed to be noticed rather than rushed through, Slo invites you to linger a little longer, whether you’re perched at the bar or just passing through.

We caught up with Colin and Paul ahead of Slo Pour Saturday, where they’ll be serving their house pour-over alongside a rotating guest roast.

Q: Slo is built around the idea of making time. What did you feel was missing from the coffee culture that led you here?


Colin: We’re blessed with the city's diversified coffee shop offerings, and we’re honored to be part of it. At Slo, we strive to be present: our baristas are present to deliver top-notch hospitality, and our patrons are present to connect with the coffee, themselves, friends, families or colleagues. Time is a precious commodity, and we’re forever grateful that our team and customers spend their time and be present with us.


Paul: There are so many great coffee shops in Vancouver, and I’ve always had a lot of respect for the level of quality and care in the scene here. For me, it wasn’t just about trying to do “better” coffee, it was about exploring a different feeling. We became interested in what happens when a space is designed to genuinely hold a pause. Not a surface-level idea of slowing down, but something more deliberate, where every detail, from the environment to the service to the product, works together to soften the pace and invite you to linger, to notice, to settle in. Slo emerged from that idea. A belief that a café can move away from urgency and toward presence, less transactional, more atmospheric, even if you're taking coffee to go. A place where time isn’t something you’re trying to keep up with, but something you can actually feel.

Q: What's the first drink you recommend to someone who’s visiting Slo for the first time?


Colin: Iced coffee. It is made with our Epoch beans which are single-origin Ethiopian. You will be surprised how much flavour can be packed into such a simple drink. 


Paul: I usually recommend whatever our current seasonal feature is, our team puts a lot of care into developing those drinks, and they’re always so good. Right now, we have an Iced Orange Flash Brew at our Fraser location that’s especially good. Otherwise, I tend to suggest an espresso-based drink like a cortado. Our Episode Espresso is a personal favourite.

Q: Which drink on the menu feels most like you?


Colin: I’m complicated: when I’m bright and relaxed, I’m the light and airy Iced Blood Orange Flash Brew at our Fraser St. location; when I’m deep in thought and concentrated, I’m the Orange Blossom Latte with Oat Milk at our Pacific Centre location, where the caramelized honey flavour keeps me focused. 


Paul: That’s a very layered question, ha! I’d say two drinks come to mind. Our lattes are pure joy: nutty, chocolatey espresso paired with silky smooth milk, it’s the kind of thing that just makes you happy. At the same time, our pour-overs are becoming more popular, and for good reason. They invite a slower, more intentional moment, something you can really sit with, savour, and think about a little more.

Q: Slo is rooted in intention. How does that mindset show up in the way you get dressed each day?


Colin: To be honest, this is the area where I need help. I’m very practical, so I usually pick my clothes based on the weather. You will find me in a thick warm parka every day in the winter and I certainly need to work on my styling.   


Paul: I’ve really come to appreciate picking out my outfit the night before and getting everything ready ahead of time. It makes my mornings feel a lot calmer and saves me from those rushed, half-asleep decisions when my taste isn’t always the most reliable. This way, I know I’m starting the day feeling good in what I’m wearing, and it gives me a bit more time to enjoy a proper morning coffee before heading out. I usually go for something smart casual, paired with comfy trainers. it strikes the right balance for more formal meetings while still working away in the café, and makes being on my feet all day that much easier.

Q: What does a perfect, unhurried morning look like for each of you right now?


Colin: As a single dad, I would love an unhurried morning where I don't need to get everything ready to take my son to school. However, I grew to enjoy waking up early to give myself time and not having to rush through tasks. After dropping him off, I would come to our shop and make myself a flat white to complete the perfect morning routine.


Paul: A not-too-early Saturday wake up, making pour-overs for my partner and me with some classical music playing in the background. Then it’s brunch with friends, followed by a long walk through Stanley Park with my dog Norman. Hard to beat that, really.
